Alcazar is a delicious sweet recipe, with a sensational mix of textures, but it is also a caloric bomb, which must be enjoyed with great care!
540 g old
540 g ground nut
400 g butter (two packs)
5-6 tablespoons of cocoa
1 vanilla sugar bag
dark chocolate + a little milk
Method of preparation
Separate the whites from the yellows and beat them with a pinch of salt. Gradually add half the total amount of sugar, until it forms a composition like honey and then add the essence of vanilla, vanilla sugar and walnut.
From this composition, you have to bake two sheets in trays lined with butter and flour.
In the meantime, prepare the cream, beating the yolks with the rest of the sugar, in a saucepan located at bain-marie. Leave it until it thickens. Then let the composition cool. Add the butter, previously rubbed foam in the cream of yellow. Put a little lemon juice, and, if you still have it in the house, a handful of ground nuts.
Divide the cream so that you fill the two sheets of cake and leave a little to spread a layer on top.
Melt the dark chocolate, with a little milk, and add it over the cake, then chill it.
